A Waterford distillery has launched the first organic Irish whiskey.
More than 20,000 bottles of the single malt are being released by Waterford Whisky into some 25 markets, including other EU countries and the USA.The whiskey, certified by the Organic Trust, was distilled in 2016. It is produced from barley grown organically on six farms .
“We sought out maverick farmers, inspirational growers, iconoclasts whose ethos and way of life respects the land and the old ways in the pursuit of pure flavours over yield imperatives,” the company explains on its website.
Waterford Whisky is a brand name for products from Waterford Distillery in Mary Street, Waterford city. It specialises in single-farm products but that was not possible this time because of the low availability of organic barley. The distillery hopes eventually to produce a single-farm organic whiskey.
